Today is the last day before Ash Wednesday and the beginning of Lent. It's “Pancake Day”! Formerly, people didn’t eat anything made with fats or butter during the fasting period, so making pancakes was a form of thrift as well as self-indulgence. The typical menu served on this day is still pancakes with sausages, bacon or meat scraps.
While we had pancakes made out of a ready-mixed dough this morning, I realised that I prefer my self-made (vegan) options. I don't want to deprive you of these and have therefore put together my favourite recipes:
Basic vegan pancake recipe (2 servings):
- 200 g flour, type 405 or 550
- 1 sachet of vanilla sugar
- ½ pinch cinnamon powder
- 1 tbsp applesauce
- ½ tbsp apple cider vinegar
- ½ bag of cream of tartar baking powder
First mix all the dry ingredients and then add the wet ingredients. Mix everything well with a whisk. For a particularly good result, cover and place in the refrigerator overnight. The dough can also be used directly. Heat some vegetable fat in a pan, place small portions of dough in the hot fat and bake until golden brown, then turn over and finish baking.
Leftover-Rice-Pancakes (2 servings):
No matter how much rice I make, I always have leftovers. This is a perfect way to use them! The pancakes are super fluffy and if you don’t know that rice is used, you won’t taste it!
- 1 cup (170g) leftover rice - 1 banana - 2/3 cup (80g) flour - 1 heaped Tsp baking powder - 1 Tsp vanilla extract - 1/2 cup (125ml) plant milk
Mash up the banana and the rice. Mix up with the remaining ingredients and fry.
Oat and banana pancakes (2 servings):
- 200 g oat flakes, (tender and gluten-free) - 200 ml plant milk - 1 tsp baking powder - 2 bananas, ripe
Process the oat flakes into flour in a blender. Mash the banana well with a fork and mix with the remaining ingredients. Gradually fry small pancakes from the batter in a pan.
All these pancakes taste especially delicious with maple syrup, beet syrup, jam, sugar & cinnamon, chocolate or fruits.
